When we’re blending barrels with fruit, we always referment the fruit with the beer at very high levels to allow us to tone down the fruit if we’d like. This blend has the organic plums used at about 2 pounds per gallon of Saison. This is the only Plum Fruit Stand we made from the 2017 harvest.
