Farmhouse Ales

These are just a few of our Farmhouse Ales you will find at Casey Brewing and Blending. Each ale is consciously crafted and blended with the highest quality ingredients. We like to add to each of our "base beers" and experiment with dry hopping, late hopping, wet hopping and vairous other techniques that change the origional beer to develop new flavors and profiles. Then we decide if we want to take that beer and fresh whole fruit to it and which fruit will complement the beer the best. You might also find our farhouse ales aged in barrels other than wine barrels, like bourbon barrels, tequila barrels etc. We take the "base beer" and choose to fruit it or double fruit it which we call our "Preserves" Farmhouse Ales.

Saison 4 Website

Saison

Saison was the first Casey Brewing and Blending beer and it was brewed with 100% Colorado ingredients. It is brewed with malted and raw barley and wheat, Cascade hops and our proprietary yeast culture. After months of aging in vintage oak wine barrels the beer is naturally bottle conditioned producing a complex flavor and unique tasting experience.

Fruit Stand 4 Website

FRUIT STAND

Fruit Stand® is our fruited version of Saison. It contains the same base beer characteristics as Saison but we have layered in some of our favorite fruits to create a whole new flavor profile. We experiment with many different fruits but each beer is always blended with about two pounds of whole fruit per gallon then aged in oak wine barrels.

East Bank 4 Website

East Bank

East Bank® is our honey Farmhouse ale. We add local honey to the beer in addition to the hint of caramel malt added to the local barley and wheat. When the honey is combined with our proprietary yeast culture it creates distinct fruit and citrus notes. Then it is aged in oak wine barrels for months and naturally bottle conditioned.

West Bank 4 Website

West bank

West Bank is our maple syrup farmhouse ale. We added pure Vermont maple syrup to the beer in addition to the hint of caramel malt and local barley and wheat. It is then aged in oak wine barrels for months and naturally bottle conditioned. When the maple syrup is combined with our proprietary yeast culture it creates distinct fruit and citrus notes in addition to hints of maple syrup sweetness.

Rose 4 Website

Rose

Rosé is the most delicate fruit beer that is brewed by Casey Brewing. It is a custom blend of Farmhouse ales that is aged on fruit that has been previously aged with another base beer. We use the secondary fruit to achieve a harmony of fruit and farmhouse funk that is subtle and flavorful.

Funky Blender 4 Website

Funky Blender

Funky Blender is a tart Farmhouse ale made with 100% Colorado ingredients. We increased the gravity and added more hops later in the process. Most importantly we added special yeast strains to our complex house culture which creates the funk in this beer. Funky Blender is fermented and aged in vintage oak wine barrels for months and then naturally bottle conditioned.

Undertone 4 Website

Undertone

Undertone is our Farmhouse ale brewed with oats. We added the oats to create a unique beer to our line up. The addition of oats brings out a lovely and intense citrus flavor not found in any of our other blends.

Backdrop 4 Website

BACKDROP

Backdrop is our new farmhouse ale brewed with buckwheat. By adding the buckwheat to the grist alongside the barley and wheat and aging for close to a year in oak, we ended up with a rustic and complex farmhouse ale completely different from the rest of our line up. The buckwheat adds a distinct and unique aroma and body to the beer.

Ghost Note 4 Website

ghost note

Ghost Note is a Farmhouse style ale brewed with a hint of spelt. The spelt not only adds more to the body of the beer but the yeast reacts differently to the grain as opposed to barley. We don’t use that much of it in this blend but what we do use is a “ghost note” amount. It isn’t always forward in your tasting experience but it does make all the difference when brewing.

Dandelion 4 Website

Dandelion

Dandelion is our seasonal farmhouse ale brewed with local, hand-picked dandelions. We tweaked a favorite farmhouse ale recipe to allow the dandelions to be the showcase and added them to the end of the brewing process. We then fermented and aged this new farmhouse ale in oak barrels for several months and loved the results. The dandelions create an earthy complexity that is subtle but unique to our lineup of beers.

Spotlight 4 Website

Spotlight

Spotlight is our Farmhouse ale brewed with rye. We experimented with malted rye to one of our favorite farmhouse recipes which created a "spotlight" on the unique flavor of the grain and how it interacts with our yeast culture. The addition of the rye brought out a rich mouthfeel and fruity esters that are balanced by a delicate acidity with plenty of complexity.

Golden Note 4 Website

GOLDEN NOTE

Golden Note is our new farmhouse ale brewed with honey oats. By adding the honey malted oats to the rest of the traditional grist it creates a soft and sweet flavor that reminds us of the golden sunsets we see over the hills of the Roaring Fork Valley.

Leaner 4 Website

Leaner

Leaner is our Farmhouse ale brewed in collaboration with Side Project Brewing from St. Louis, MO. We share yeast cultures and peaches to each create our own version of the beer. We use both house yeast cultures to ferment the base beer in oak barrels for several months before aging the beer on whole, fresh organic peaches. We came up with the name from one of our peach growers; a leaner is a peach so ripe that you must lean forward to avoid the juice from spilling down your shirt.

Jammy 4 Website

Jammy

Jammy is our blackberry Farmhouse ale brewed in collaboration with Side Project Brewing from St. Louis, MO. We use both of our house yeast cultures to ferment the base beer in oak barrels for several months before aging the beer on whole, fresh blackberries. The addition of their yeast culture to ours adds a touch more acidity and complexity. The blackberries we use are sourced from a local grower in Hotchkiss, Colorado and add a delicious amount of perceived sweetness to the blend.

Velvet 4 Website

Velvet

Velvet is our apricot Farmhouse ale brewed in collaboration with Side Project Brewing from St. Louis, MO. We use both of our house yeast cultures to ferment the base beer in oak barrels for several months before aging the beer on whole, fresh apricots. The addition of their yeast culture to ours adds a touch more acidity and complexity. The apricots we use are sourced from a local Colorado grower and they add just the right amount of sweetness and fruit flavor to the basebeer.

Fruitless 4 Website

Fruitless

Fruitless is our Farmhouse ale brewed in collaboration with Side Project Brewing from St. Louis, MO. We brewed this beer with our house culture in addition to Side Projects' yeast culture to get different acids and funk not often found in our blends. Unlike our other collaborations with Side Project, this beer is fruitless!

100 nelson IPA

100% Nelson

This juice bomb would not be possible if it wasn’t for all our amazing friends in this industry that have so graciously given us access to this incredibly hard to come by hop, Nelson. To complement the tropical hop, we brewed a recipe with malted wheat and flaked oats and then hopped exclusively with Nelson.
