Our first grape beer from the 2017 harvest! Chambourcin is a red grape variety with blood red juice. We sourced several red grape varietals last year, but this was by far the darkest we saw during our crush. We aged the barrels of Oak Theory on the grapes at a rate of 4 pounds per gallon for 2 months to get the maximum extraction of color and flavor as we could.

We choose to use Viognier grapes from Palisade for the only white grape Cut we made from the 2017 harvest . We loved what this variety contributed to last years CFP and FS blends, and the Oak Theory funk just takes those flavors to another level. A hint of vanilla, this blend definitely straddles the line between biodynamic sparking wine and beer. Over 4 pounds of grapes per gallon of Oak Theory.
